Sturgeon meat balls

INGREDIENTS: 1 kg sturgeon grid meat (red and white mix), 2 whisked eggs, 200 g instant mashed potatoes (dehydrated potatoes, butter, sea salt), garlic and dill weed to taste, salt to taste, ½ teaspoon fresh-ground black pepper; vegetable oil for pan frying.

DIRECTIONS: In a bowl mix the grind meat, whisked eggs, potato flakes, garlic and dill. Add salt and pepper to taste. May add extra instant mashed potatoes until consistency of a nice patty is reached. Can cook right away or let sit for 30 min in the refrigerator to allow ingredients to work together. Wet your hands with cold water and roll 1 ½ inch balls and fry in a frying pan with vegetable oil at high temperature until light brown color. Serve hot or cold.

Same recipe can be used to make delicious sturgeon burgers, just grill the patties and enjoy!
