« Why sturgeons? Because we love them! Sturgeons are the best fish in the world! »

Cornel Ceapa, PhD in Sturgeon Biology, founder, owner and operator.

Sturgeons first appeared on Earth approximately 250 million years ago by evolving and mutating from their ancestor, the shark. Fossil discoveries indicate that the current genus of sturgeon (Acipenser) dates from the Upper Cretaceous period, approximately 70 million years ago. Worldwide there are 27 species of sturgeon, all of which live in the Northern hemisphere and are either threatened or endangered. In the future, aquaculture can and will play an important role in saving them from extinction.

At Acadian Sturgeon and Caviar, Inc, we sustainably produce and sell live sturgeon, caviar, sturgeon products (fillets, loins, smoked fillets etc) and by-products (fins, skins, isinglass, male gonads) all over the world, from Taiwan to United States. At the same time, in order to promote our Canadian native sturgeon species and encourage development of sturgeon aquaculture, we offer consulting services regarding sturgeon spawning, growing, designing of sturgeon farms, sturgeon ecology etc.
